Asian Mango Slaw
My mom introduced me to this recipe and I fell in love with it! Originally it is from the cookbook Against All Grain so I cannot take any credit for this one but I did dumb it down a bit to make it more cost-effective and less time consuming to make. It costs under $20 for all of the ingredients and it is the most refreshing and delicious side dish ever! We make it on Sundays and eat it with lunches and dinners throughout the week! There is a good amount of chopping but that is about it! I am sharing the recipe below along with a downloadable PDF for you to save to your computer or phone!
Asian Mango Slaw
*from Against All Grain cookbook but I used a
bottled peanut vinaigrette so see the cookbook for the dressing from scratch!*
Prep time: 20 min
Serving Size: 3-4 people
Ingredients:
1 bag Trader Joes Broccoli Slaw bag
1 red pepper (julienned)
3 carrots (julienned)
1 mango (peeled and julienned)
1/4 cup basil (chopped)
Sliced Almonds
1/4 cup Asian Style Spicy Peanut Vinaigrette from Trader Joes
Directions:
Combine all ingredients in a bowl!
