Food prepping can be one of the easiest ways to stay on top food intake during the week and I am sharing the easiest recipe that my husband makes every Sunday night. He has to be out the door very early so to have his breakfast (which is technically around noon because we intermittent fast) ready to go is so nice! Just add your favorite hot sauce on top and it is ready to eat!

Egg (12)
Sausage (1 lb)
Spinach (handful)
Onion (1/2)
Mushshrooms (handful)
S&P
Preheat oven 400 degrees.
Grease your pan.
Slice all the vegetables and sausage and add to the pan.
Crack eggs into the bowl and add S&P then stir and pour the egg on top of the vegetables and sausage.
Cook for 45 min – 1 hour depending on the oven. (Check after 40 min and add time accordingly)
Let cool then cut into slices and put into containers for the week.
Let me know what you think!
